Endopolygalacturonase activity of a Kluyveromices marxianus yeast preparation isolated from coffee pulp

Abstract

Polygalacturonase enzymes are characterized by
their depolymerizing action on the polygalacturonic acid and
low metoxilation degree pectins; they can appear in higher
plants or be produced by diferent microorganisms. The
objective of the present work is to isolate and characterize the
pectinolytic activity of the culture means of Kluyveromyces
marxianus yeast obtained by coffee pulp fermentation in the
University of Oriente. This preparation is characterized through
determining enzymatic activities and electrophoresis analyses,
also recording the presence of endopolygalacturonase activity.
They settle down like favorable conditions for pectic acid
degradation by the action of enzymes present in this pH 5.2
preparation at 37oC.
