Abstract

Quality is the group of chemical and physical
characteristics, related with the nutritious-sanitarium, industrial
and commercial value of the agricultural product, that
can be dedicated for human or animal feeding. The present
work deals with the topics related to physical and nutritional
quality in common beans, particularly Phaseolus vulgaris L.,
highlighting its characteristics as well as the importance they
have for human health. This work allowed to identify the
contents of total proteins, fiber, starches, micronutrients, water
absorption capacity, anti-nutritional factors as well as cooking
time and storage conditions, as the main indicators and
parameters of bean quality; the content of anti-nutritional
factors as well as the cooking time conditioned and storage
time having a particular importance inside them all.
